Recipe For Ground Turkey Chili</strong></p>
<p>9 Servings (1 cup each)</p>
<p><em>Ingredients</em></p>
<ul>
<li> 1 1/4 lb lean ground turkey</li>
<li> 1 green pepper</li>
<li> 1 small onion</li>
<li> 2 cans (14.5 oz) diced tomatoes (no salt added)</li>
<li> 2 cans (15.5 oz) kidney beans</li>
<li> 1 chili seasoning packet</li>
<li> cooking spray</li>
</ul>
<p><em>Directions</em></p>
<p>Saute the ground turkey in a large nonstick pot until done. Remove the turkey and drain the fat. Wipe the pot with a paper towel to remove any remaining oil or fat.</p>
<p>Dice the green peppers and onion. Spray the pot with cooking spray and saute the green peppers and onions for about 4 minutes.</p>
<p>Return the ground turkey to the pot, then add all remaining ingredients. Do not drain the tomatos or kidney beans.</p>
<p>Bring the chili mixture to a boil, cover and simmer for 10 minutes.</p>

Mexican Omelet</strong></p>
<p>Serving Size &#8211; 1</p>
<p>Ingredients</p>
<p>* 1/2 cup egg substitute<br />
* 1 Tbsp fat-free milk<br />
* 2 Tbsp canned chili beans<br />
* 1 Tbsp onion &#8211; chopped<br />
* 1 Tbsp fat-free sour cream<br />
* 1 Tbsp salsa</p>
<p>Directions</p>
<p>Combine the egg substitute and fat-free milk. Pour the mixture in a hot, non-stick pan (or use non-stick cooking spray). When the egg mixture appears solid, top it with the chili beans and chopped onion. Fold the omelet in half and cover the pan. Cook an additional 2 to 3 minutes to let all the ingredients warm up.</p>
<p>Transfer your mexican omelet to a plate and top with the sour cream and salsa.</p>

			<content:encoded><![CDATA[<p>With the holidays just around the corner, we are constantly tempted by all kinds of sweet treats from cookies to my personal favorite &#8211; fudge. Since my self control only goes so far, I had to find something that would satisfy my fudge craving without jeopardizing my health. I tried a few diabetic fudge recipes and here&#8217;s my favorite one so far. It&#8217;s a diabetic pecan fudge recipe.</p>
<p><strong> Pecan Fudge</strong></p>
<p>1 Pound Cream cheese- softened<br />
2 ounces unsweetened chocolate-melted and cooled<br />
1/2 cup Splenda<br />
1 teaspoon vanilla extract<br />
1/2 cup chopped pecans</p>
<p>With an electric mixer, cream the cream cheese, chocolate sweetener and vanilla together.  Using a spatula or large spoon fold in the pecans and pour the mixture into an 8&#215;8 inch pan (you can line it with wax paper first to make sure you can easily lift the fudge out later). Refrigerate for at least 8 hours to let the fudge set. Cut it into squares and enjoy.</p>
<p>These also make cute gifts. Pour a few of them into a small cello bag and tie a ribbon around it &#8211; Voila&#8230; a cute instant holiday gift perfect for any diabetic.</p>

<p>With the side dishes and desserts it&#8217;s another story. Mashed potatoes, sweet potato casserole and pumpkin pie, heck even the gravy you used to slater on that piece of turkey have now moved into the category of foods you should avoid. Does that mean that your Thanksgiving meal should consist mainly just of turkey? Not at all, you just may need to reinvent some of your old-time favorites.</p>
<p>Make your sweet potato casserole and pumpkin pie with a no-calorie sweeter like splenda and indulge in a small portion. Use cauliflower instead of actual potatoes for your mashed potatoes and introduce some diabetic-friendly sides like steamed cauliflower or a side salad.</p>
