Of course you already know that you have to watch what you are eating when you are a diabetic. There is actually a lot you can do to reduce your dependency on insulin with all it’s negative long term side effects on your health. I’ll periodically be sharing some of my favorite diabetic-friendly recipes with you. It’s a great way to mix things up and get some new yummy and of course healthy recipes and meal ideas.
Let’s start with this chicken pita sandwich.
Low Fat Chicken Pita Sandwich
4 Servings
Ingredients
* 2 whole-wheat pita breads (6 inches)
* 4 oz cooked chicken (sliced)
* 1 large tomato (sliced)
* 1 cucumber (sliced)
* 1/2 cup plain, low-fat yogurt
* 1/4 cup finely diced cucumber
* 1 clove of garlic (minced)
* 1 tbsp vinegar
* 1 tbsp fresh mint (chopped)
Directions
To make the yogurt dressing, combine the yogurt, diced cucumber, garlic, vinegar and fresh mint in a small bowl. Set aside.
Cut the pita rounds in half and open each pocket. Layer the sliced chicken, tomato and cucumber in each and top each pita pocket with 1/4 of the yogurt dressing.
