With the holidays just around the corner, we are constantly tempted by all kinds of sweet treats from cookies to my personal favorite – fudge. Since my self control only goes so far, I had to find something that would satisfy my fudge craving without jeopardizing my health. I tried a few diabetic fudge recipes and here’s my favorite one so far. It’s a diabetic pecan fudge recipe.

 Pecan Fudge

1 Pound Cream cheese- softened
2 ounces unsweetened chocolate-melted and cooled
1/2 cup Splenda
1 teaspoon vanilla extract
1/2 cup chopped pecans

With an electric mixer, cream the cream cheese, chocolate sweetener and vanilla together.  Using a spatula or large spoon fold in the pecans and pour the mixture into an 8×8 inch pan (you can line it with wax paper first to make sure you can easily lift the fudge out later). Refrigerate for at least 8 hours to let the fudge set. Cut it into squares and enjoy.
